Good Things in the Cafeteria

Bonus: Chicken Parmesan recipe

As the school year is well underway, lunchtime at the cafeteria has become a daily routine for students and teachers alike. The smell of freshly cooked meals wafts through the halls, drawing hungry students to their designated lunch periods.

One student, Sarah, raved about the chicken parmesan served on Wednesdays. “It’s so tasty and filling, it’s definitely my go-to meal,” she said with a smile.

Another student, Jack, expressed his love for the taco salad bar on Fridays. “I love being able to customize my meal with all my favorite toppings. It’s a great way to end the week,” he exclaimed.

Cafeteria staff say most of the meals are made from scratch using fresh ingredients. “We take pride in serving nutritious and tasty meals to our students. It’s important to us that they have a positive dining experience,” said the head chef.

For those looking to recreate their favorite cafeteria meals at home, here is the recipe for the chicken parmesan courtesy of the cafeteria staff:

Chicken Parmesan


4 boneless, skinless chicken breasts

1 cup breadcrumbs

1 cup grated parmesan cheese

1 cup marinara sauce

1 cup shredded mozzarella cheese

Salt and pepper to taste


Preheat oven to 375°F.

Season chicken breasts with salt and pepper.

In a shallow dish, mix breadcrumbs and parmesan cheese.

Dredge chicken breasts in breadcrumb mixture, making sure to coat both sides.

Place chicken breasts on a baking sheet and bake for 25 minutes.

Remove chicken from oven and top with marinara sauce and mozzarella cheese.

Return chicken to oven and bake for an additional 10 minutes, or until cheese is bubbly and golden brown.
